Funfetti Cake Cookies

I let you guys in on how messy/unorganized/empty my apartment is becoming. Well, one of the very few items left in my refrigerator was a container of leftover Funfetti cake mix from some of the Cake Batter Dip I made a month or so ago. So, being the creative I am, I Googled around until I figured out something I could make with it. I saw a few posts about using cake batter in cookies and the search was on for one with minimal ingredients!

Found this recipe through my search. It only had 3 ingredients, so it was definitely the winner. In our empty fridge and pantry, we still happened to have eggs and oil! I did a bit (okay, a lot) of tweaking, just because I didn't have an entire box of cake mix, but they turned out great!

The Recipe:

1 box cake mix (I used however much I had left in the fridge!)

1/2 c. vegetable oil (I had Olive Oil and used about 2 Tbs.)

2 eggs (I used 3 Tbs. of egg whites)

Mix oil and eggs into dry cake mix. (I added a Tbs or two of water because it was too dry).

Drop by teaspoonfuls onto ungreased cookie sheet. 350 degrees, 8-10 minutes.

According to the tweets I received afterwards, my roomies enjoyed them just as much as I did. Quite yummy!
